Quote of the Day
Juan: “Baby, what day is it today?” Me: It is Sunday, Baby. Him: No, I mean what day is it?” Me: Oh, it is the 21st of July. Him: No, what day of the fast are we on, when can we eat? Me: Oh, we’re on Day Ten, 5 more days left. Him: Gracias, Ah Dios!!!
Story of the Day:
Day 10 has arrived and the end of our fast seems close at hand. It makes me excited! 5 more little days of liquids. Though all of this juicing has been fun, and I plan to continue to drink juices, man, I do like to eat and cook. However, on the more the positive side, since I've started to cooked steamed vegetables for Juan at night to curb his detox symptoms, I get to cook, and he he feels less detox too. Which even though I don't get to eat, just the simple act of cooking relaxes me. I'm weird I know.Today was good, good, good, I had energy, my skin feels softer, I went for a run, to church and then Juan and I went to church and then went to the mall to catch the yearly blowout sale at UNIQUE-LO, it was amazing. We bought the whole store, and it only cost pennies. I am so happy to finally start feeling more energy. The only hiccup in our juicing today was that we were out all afternoon, and we had no time to come home to juice in between church and shopping. We opted to split a Strawberry Banana Smoothie without sugar at Smoothie King, yes I know, it was not true juice and it wasn't the perfect choice, but it wasn't a bad one. Don't hate. :-) I confess that it was delicious though. I think the coldness of the smoothie though hit our stomachs a little weird. It's interesting how when you're eating/drinking all natural for a while, you are able to immediately notice how temperature or synthetic foods affect your body. The body is crazy and amazing. My topic for Sunday is Juice Pulp.. What do you do with it? Good question. One of my friends told me that she stopped juicing because she felt guilty about wasting the pulp. But let me tell you something! Don't stop juicing because of this! Why? Because there are so many things that you can do with this pulp! What do we do with it? Absolutely nothing! We throw it away before the fruit flies get it. But don’t worry, this doesn’t have to be your fate you can be more resourceful than us. I'll give you some ideas. But first some pretty pulp pictures, because no post is complete without pretty pulp pictures.
Juice Pulp Uses
1) Use it for your compost pile in your garden (Juicing Compost Instructions)2) Feed it to your chickens3) Mix it with your dog's dry food for extra taste and vitamins4) The best idea? Eat it! Here's some recipes!Beet-Carrot SaladCrackersBanana BreadCarrot-Coconut DessertChicken SoupVegetable Broth 1Vegetable Broth 2**There is even a Pintrest Board dedicated to Juice Pulp Recipes here --> http://pinterest.com/juicersbest/pulp-recipes-what-to-do-with-leftover-juice-pulp/All of these ideas are great aren't they? People are super creative beings.. Unfortunately, we don't have a garden or an oven so the bread, or the crackers won't work for us (even if we did have one, we can't eat now, so say GOOD-bye! to the soup and the dessert too!..,) And we had a little chicken but the poor fellow ran away last week, so no little birdie to feed. What can we do, you ask to be more environmentally friendly and resourceful with our pounds of pulp? Tune in tomorrow and I will tell you what solution we've encountered. :-)

Juan's Stats - Juice: 3.5 Liters / Water: 3 water Weight: 5 kg less than the start Energy: Difficult, in the beginning of the day because he couldn’t sleep Friday night. Mood: Morning it was bad, but now it is good. Hunger: It was under control Detox Symptoms: Easy Cheats: A few bites of fruit Cravings: Everything, when he was on the phone with his mom this morning, he told her he wanted to eat meat, chicken and a river full of beans.. Hehe Inge's Stats - Juice: 2.3 Liters / Water: 1 liter or more Weight: 3 kg less than the start Energy: In the morning good, then after I took naps. Mood: Sleepy Hunger: Not too bad Detox Symptoms: I have a white-coated tongue. Yucky and a small red spot under my eye Cheats: Some honey Cravings: The taste of variety. In Korea our veggie and fruit choices are really limited so the juices start to taste the same after awhile.Inge's Conclusion of the Day - I’m taking another nap :-)
Juan's Opinion of Day 8 - I feel terrible today, I feel hot feverish, sneezy and it feel itchy like ants are walking on me. I regret that I am doing this. (Perhaps his detox is happening too fast.. and we should slow it down?)Tip of the Day: Sometimes you detox too fast and detox almost become unbearable. If that happens to you don't quit, but just slow down your detox. If you find that your detox is going too fast you can slow it down, by adding a small amount of fresh foods or cooked vegetables into your juice regime so that your body won't detox so fast.

Juan : "I think this is a bad idea. This is an atrocity. I want to eat. I'm only doing this 10 days."Inge: "No, you're doing it 15 days. You're not leaving me!"
Favorite Juice(s) of the Day: Pumpkin Juice with Greens was nice. Also we made a Pizza Juice.. No, no, we didn't put a pizza in the juicer. We're not that desperate.... yet.....
Tip of the Day: Drink Green, Why? They are so good for you! Green Leafy plants, like spinach, kale, parsley are really powerful. They have Vitamins C, K, E, and A, micronutrients, minerals like calcium and magnesium, and even protein. Crazy right? They are know to give you amazing energy, fight cancer, help your heart, your blood, your bones, almost anything and everything. Also I heard that if juice enough of them, then you may fly like Superman! It's true. I think it will take me about 2 more weeks of juicing greens to fly. :-)Even professionals say so..."Greens are the No. 1 food you can eat regularly to help improve your health," says Jill Nussinow, MS, RD, a culinary educator in Northern California and the author of The Veggie Queen.See, I told you that they are amazing. So throw a couple of handfuls of this into your juice or smoothies every day.Types of Greens to Juice:- Spinach (preferably baby spinach)- Kale- Swiss chard- Collard greens- Dandelion greens- Turnip greens- Beat greens- Parsley- Arugula- Romaine lettuce- Green and red leaf lettuceResource:
Cost Saving Tip of the Day: How do you save money when you juice? Look for sales! When something is on sale, just go crazy and buy, buy, buy, buy! And don't worry if the clerk lady in the supermarket thinks you're nuts for buying 50 cucumbers at a time. It's a free country. (Well, I hope so!) Also choose the produce that is in season and available in your area/country.In Korea we don't have the variety of vegetable/fruit options like the USA or the Dominican Republic. We have to work at buying smarter, but if we buy in the street market and buy the vegetables that are in season, we can stretch our dollar (won) super far. And the street market people will give you a nice discount too, if you woo them enough with your foreign charms and a few nice Korean phrases. ~ buying a lot and being a regular customer helps too. ;-)Story of Day Four : Today I set out to find what we spend in a day for juicing. It is cheaper or more expensive than a regular day of eating for us? Today we had a variety of Juices. Here is the run down of the day with produce cost attached.Green Pepper Carrot Tomato Juice = 2 Green Peppers, 6 Carrots, 4 Med Tomatoes $3 = 24oz of juiceMean Green Juice = 10 cucumbers, 4 apples, 2 lemons, a ginger knuckle, 25 leaves of Spinach, 25 leaves of lettuce = $7.5 = 78 oz of juiceJuan's Special Juice = 3 kiwis, 1 bag of spinach, 4 cucumbers, 2 apples, 1 small peach, 3 bananas = $5.50 = 40 ozPumpkin Cucumber Juice = 10 cucumbers, 1/2 Korean pumpkin, 1 carrot, 2 apples, 1 banana, ginger, 1/2 spinach, 1/2 lemon = $6 = 65 ozTomato Spinach Juice = 2 handfuls of spinach, 4-5 medium tomatoes, 3 green peppers = $2.50 = 20ozToday's Total = $24.50 = 227 oz of juice or 1.8 gallons of juice$24.50 for two people to drink juice isn't bad. If you're single only about 12-15$ a day., very doable. I think that this is a bit more than when we eat only at home, but less than days that we go out to eat. Also we are getting many more nutrients and fresh foods then in a normal day. The key to juicing on a budget is to know what fruits and vegetables are available in your area. In Korea, you can't go out and buy cilantro or celery or green apples here unless we travel far and/or spending a lot of money, but we can buy romaine lettuce and spinach and Pumpkin Leaves easily. There are almost always nutrition substitutes. You just have to look for them.Juicing Resource : Here is a great resource I found today from

Tip of the Day: Ok so Day 3 isn't so easy. You're hungry, tired, achy and you feel like a fish in vat of green juice. What's worse is that there are 12 days to go and that seems discouraging,. This is exactly when you need to think long term. Fifteen days is nothing. Fifteen days is only 1/2 of a month and 4.16% of a year. You're just taking 4.16% of one year to clean the insides of your body. Not so bad, right? How much time do you spend cleaning your house? or your car? Probably a lot more time, and what is more important your house or your body? Also, think, What benefits will you gain from cleansing? Many things but let's pick one: --> More energy. And more energy means that you will have more energy to be amazing parent to your kids, to be a good boss and a better person. Because when you're tired and worn out, it is quite hard to really love people well. Remember 15 days is nothing, for you, your health and the people around you.Story of Day Two: From what people say Day 2 and 3 are the hardest of days of the fast. I think Day 2 wins in evilness for me. I had all sorts of cravings for anything and everything dry and salty. Mostly crackers and Pizza too. Day 3 was a bit easier. I woke up early, was immediately hungry, so I drank hot lemon water to detox, cleaned a bit and read the Bible, and then made a pumpkin green pepper juice. It was amazing! But I used almost a whole pumpkin, and I only was rewarded with maybe, 12 ounces of juice. Apparently pumpkins don't have too much water, but the juice was amazing so I didn't care. Though I had to make a
Tip of the Day: If at all possible stay in your home the first few days of the fast so the evil people in the world don't tempt you with food. If you go out you run the risk that any food, I mean any food, even the food you normally thing is just gross, will all of the sudden appear sooooo delicious. So do yourself a favor.. Start this on the weekend and stay home! ^^Story of Day One: We've completed day one! :-) Asah! (is a Korea way to say, Hoorah!) So happy! The day wasn't so bad. I didn't experience many detox symptoms, at one point of the day, I think my temperature was higher than normal, but not too much. I think the worst part for me was just the mental battles. Like at lunchtime there were all these delicious smells coming from our neighbor's house. That was painful. After our green breakfast juice, Juan got a nasty fever, and went back to bed for 4 hours to sleep it off. When he woke up, I was annoyingly cheery and energetic, and he asked me why I wasn't suffering like him. "Perhaps, I'm cleaner than you?" I said. But for some reason, he didn't seem to appreciate that conclusion so much. hehehe :-) But I really should practice more humility, because the detox will probably hit me in a couple of days and I need him to feel sorry for me when I'm sick in bed and he's jumping off the walls. Most of the day we relaxed, drank lots of juice and rested because the cornerstone of a juice fast is to clean and restore your body. Rest is an essential part of it. You can't heal properly if you're not allow it to rest. So we had a perfectly lazy day.The only hiccup in the day was when we went to church for a meeting and they were serving dinner. Chinese food!We arrived with our beautiful liter-jugs of

Sant Feliu, Spain, Summer 2012. It was a beautiful July day, almost a year ago on the beaches of Sant Feliu de Guixols. These pictures bring back the feeling of peace and freedom. Lately I've been understanding the source of freedom comes from truth; I want to learn what the truth really is. Because when you know the truth you get to be free...John 8:32 says, "And you shall know the truth, and the truth shall make you free." Cool, right?Don't live in fear of the truth, but embrace it. Search for it. Don't lie to yourself or be afraid of what you'll find. Even if you find a truth that isn't pleasant. You know what, now at least you know what is real so you have power to can change it. But you can't do much of anything when you're become drowsy and drunk with lies. So Go! Search the truth out in your life, look it in the eye, because when you find it you will finally be free and freedom is so sweet.

On this one afternoon, I was lucky enough to find something my friend Amanda dubs 'Jesus light'... Isn't Jesus light, beautiful?
A pretty day in Daejeon, South Korea; enjoying the walk from church over the Expo Park bridge to home :)
